Here, the elevation ranges from 200 to 500 meters, providing a cool micro – climate where the sun’s rays filter through the clouds, caressing the young tea bushes. The surrounding forests, filled with oak and pine trees, contribute to a rich, natural ecosystem. Mountain springs trickle down the slopes, providing a constant source of pure, mineral – rich water that nourishes the roots of the tea plants, endowing them with a unique freshness.
Exceptional Flavor Profile
Savor the tea’s elegant, refreshing essence: a bright, grassy base with notes of freshly cut hay and tender green beans, balanced by a subtle floral sweetness that lingers on the palate. Harvested in late February to early March, when the first tender buds of the “Wuniuzao” variety emerge, the tea pickers rise before dawn. They carefully pluck only the finest one – bud – one – leaf shoots, ensuring that each piece is of the highest quality. The fresh leaves are then gently carried down the mountain in bamboo baskets to the processing factory. Here, they first undergo a withering process in a well – ventilated, shaded area for 4 – 6 hours, reducing their moisture content slightly. Next, they are pan – fried at a precise temperature of around 120 – 140°C for about 2 – 3 minutes to halt enzymatic activity and fix the green color. After that, a gentle rolling and shaping process follows, which helps to release the tea’s natural oils and form its characteristic shape. Finally, the tea is dried at a low temperature of 80 – 90°C until it reaches the perfect dryness, locking in its delicate flavor and aroma. This meticulous process, a blend of traditional skills and modern techniques, results in a tea that is both fresh and full of character.
