Thriving in the untamed, rugged mountains of Anhui’s Jing County, especially in the secluded regions of Yongxi, this extraordinary green tea draws life from a harsh yet fertile environment. Amidst the steep slopes and ancient forests, at elevations ranging from 300 to 800 meters, the tea bushes of the unique Yongxi Liu Ye Zhong variety cling to the rocky soil. The surrounding wild undergrowth and scattered pine trees create a rich, biodiverse ecosystem. Mist often shrouds the mountains, softening the sunlight into a gentle, diffused glow that the tea leaves drink in, while spring-fed streams cascade down, providing a constant source of pure, cold water that nourishes the roots, imbuing the leaves with a wild, mountain freshness.
Exceptional Flavor Profile
Savor the tea’s bold, complex essence: a deep, earthy base with notes of freshly cut grass and wild herbs, balanced by a sharp, invigorating bitterness that gradually evolves into a long – lasting, sweet aftertaste. The first sip delivers a robust, almost primal taste—reminiscent of a foray into an uncharted forest—with a hint of natural astringency that adds a sense of structure. A “wild mountain” aroma lingers in the nose, while the finish leaves a clean, revitalizing sensation, as if cleansing the palate of the mundane. The liquor shines with a vibrant, pale green – yellow hue, its texture full – bodied yet clear, carrying the untamed spirit of its mountain origins.
Artisanal Craftsmanship
Harvested in the early spring, from late March to early April, when the tender shoots of the Yongxi Liu Ye Zhong variety first emerge, local tea pickers venture deep into the mountains before dawn. They meticulously pluck only the finest one – bud – two – leaf shoots, ensuring each is of the highest quality. The fresh leaves are carefully placed in bamboo baskets and gently carried down the mountain to the small, family – run workshops. Here, they first undergo a withering process in a well – ventilated, shaded area for 3 – 5 hours, reducing their moisture content slightly. Next, they are pan – fried at a precise temperature of around 130 – 150°C for about 3 – 4 minutes to halt enzymatic activity and fix the green color. After that, a gentle rolling and shaping process follows, which helps to release the tea’s natural oils and form its characteristic shape. The leaves then go through multiple rounds of drying and re – rolling, with each step carefully controlled to enhance the flavor and texture. Finally, the tea is dried to a crisp at a low temperature of 70 – 80°C until it reaches the perfect dryness, locking in its wild, mountain – fresh flavor and aroma. This painstaking process, passed down through generations, results in a tea that is both robust and full of character.
Perfect for Every Occasion
Ideal for early mornings when you need a powerful wake – up call, or as a bracing afternoon drink to combat fatigue during a long day. Its bold, robust flavor pairs splendidly with hearty snacks like smoked meats or aged cheeses, cutting through the richness with its sharpness. It also shines as a beverage for those who appreciate the rugged and the wild, whether enjoyed during a mountain hike or as a moment of connection with nature at home. Whether you’re a seasoned green tea lover or someone looking for a taste of the untamed, it brings the essence of the wild mountains to every cup.
